Frozen veg

My dh and I cook from scratch and use fresh veggies with every meal

In an effort to waste less and speed up cooking times I've bought the following today

Frozen root veg casserole mix
Frozen butternut squash chunks
Frozen sweet potato chunks
Frozen red onions
Frozen spinach

We have frozen peas as standard, does any one have any ideas how to use them

In the store I had the romantic idea that I'd get in from work and whip up health food quickly like red lentil butternut squash and spinach curry, but now I feel completely over whelmed by the idea of frozen veggies and am panicking about textural integrity etc

Help.....

Just to point out this isn't all we have to eat we have a regular food budget etc

I use frozen veg quite a lot. We both work FT and I just find it easier.

Frozen casserole veg - straight into the slow cooker!

Frozen onions/mushrooms are great to add to bolognaise and cottage pie.

I usually have frozen cauli/broccoli/carrots too in case I decide to do a quick midweek dinner.

I've never had any big problems with texture, just be careful not to overlook (same with any veg but I think because it's frozen you think it should take ages!)

Thank you I'm thinking of using some of the casserole mix in a Shepherds pie hopefully this will be OK
