Vegan italian?

Dh has gone vegan. We are already alll veggie so shouldn't be too hard. But he doesn't really like middle eastern flavours and I'm not very good at cooking Indian food. My forte is more Italian - although that is quite dairy heavy. Apart from tomato sauce, does anyone have any tips for vegan food with Italian flavours?

Make your own pesto without the hard cheese. Serve gnocchi with a roasted pepper sauce. Griddle long slices of courgette, peppers etc after marinating in balsamic vinegar and olive oil.

Salsa Verde is another good standby sauce. Caponata and Melanzane which I make with cashew milk. There's also a good Parmesan vegan substitute which my lactose intolerant DD introduced me to and there's a list of vegan cheeses and their best uses here:

I have never made, but am aware of, using avocado as a creamy sauce on pasta.

I went to Sorrento as a vegan, and ate the most delicious focaccia dripping with olive oil. Not a staple —although I could happily live off it—.

Risotto! So many possible variations. Is he eating vegan cheese? That'll give you more options.

Brilliant ideas, thanks! Have not tried vegan cheese for about a decade, so it's good to see there are some more choices out there.

The avocado recipe looks great! And I have too many avocados at the moment - would never have thought of using it like that

My vegan colleague eats loads of vegan cheese and puts soy yogurt in curries and homemade naan.

Sweets wise, she made yum vegan brownies! Loads of easy recipes out there. Uses oil not marge. Lovely texture and dense taste.

Jamie Oliver Lemon courgette linguine - he adds parmesan but suggests pine nuts for vegans and he's right - a tasty and easy pasta. I'd add some garlic but it's fine without, just better with!
