I love the Hairy Bikers one on the BBC website. Seved with coleslaw, BBQ sauce and lovely crusty rolls or jacket potato.

I use pork shoulder. Cut off the fat to make crackling and then rub the pork in a mix of paprika, ground cumin, ground cinnamon and salt. Throw it in the slow cooker with loads of sliced onions underneath the meat and a cup of chicken stock. Cook on low for as long as i've got (7 hours this weekend). Then take out the meat and pull with two forks, drain the stock saving the onions and some of the stock. Put onions, pork and as much/little of the stock as you want back in the slow cooker to keep warm. I serve with crusty rolls, wedges, green salad, coleslaw, sour cream and chive dip and bbq sauce. Oh and of course...the crackling!

Cornbread! I made it for the first time last week and it was so easy and went down really well. I also did a 'rainbow slaw' (we're not cabbage fans) with carrot, beetroot and apple and a sour cream and white wine vinegar dressing.
