Chicken, shallots, lardons....

What would you do to turn this into a supper for two adults and a hungry teenager? Two large chicken breasts, a small bag of shallots and a pack of lardons.

Spuds, rice or pasta available.

Bit of butter and oil in the pan, fine dice shallots and cook slowly for 5 mins. Add in chicken and brown. Then add in a bit of white wine and chicken stock. Reduce the liquid for 10 min. Season well . Add in a bit of cream/crem fresh.

In a clean pan cook the lardons till crispy.

Cook some linguine, stir through the sauce and top with crispy lardons and some Parmesan if you have it.

Or make a white sauce and turn into a pie filling and cut the spuds thinly and put on top or mash if they are that kind of spuds.

And pop in oven to crisp the top up.

Drop of white wine if you have someone.
