I will defo be doing some of those recipes above when I have time.
However...here is my quick fix.
Make your own pasta sauce. Make a base of olive oil, garlic, tinned plum tomatoes and some herbs (eg. oregano, basil and marjoram). I usually do a batch of 10-12 tin tomatoes. Then either oven bake peppers and aubergines in olive oil or steam broccoli, carrots, spinach and any other leftover veg and add to your tomato base. Blend to a puree. Season.
Buy massive ice cube trays or use small food bags. I use baby food freezer cubes and freeze individual portions. Keep in freezer as your base. I have a whole drawer full of this for emergencies. I use it for pasta sauces, cannelloni and lasagna.
Buy tinned crab, tuna, mackerel and sardines preferably in olive oil. When you need a quick dinner, boil pasta, defrost pasta sauce and then dump tin of one of the above on the pasta and sauce and mix. Grate parmesan on top.
My children love this. Their favourite dinner is actually a tin of mackerel in olive oil dumped on boiled potatoes.
