Impressive but easy one pan dish?

I've just got myself a lovely big cast iron casserole dish, I did a Mediterranean chicken dish in it last night and it looked so fancy!

What else could I cook in it?

Pork tenderloin with apple, shallots and cider, perfect autumn one pot yummyiness
Veggie chilli
Chicken chasseur
Sausage casserole (probably not hugely impressive but delicious none the less!)
Chicken, apricot and chickpea tagine.
Beef in red wine cobbler

Onions, garlic cloves, sausages, new potatoes, rosemary and loads of olive oil. Cook in the oven and throw in some tomatoes still on the vine towards the end. The oil and fat from the sausages(!) make it delicious for dipping bread into.
I cook this for some friends on a regular basis and they never let me cook anything else.

This is an old favorate but everyone loves it.

Pack of green beans or two.
Pack of cherry tomatoes.
A good quantity of pitted kalamatra olives.
Tablespoon or two of capers.
Couple of anchovies chopped up
Salt, pepper
Olive oil (be generous)
Give it a good mix around.

Chuck on a cod fillet per person on top (rub with oil, salt pepper and top with a chunky lemon slice and an anchovy)

Bake in oven for 20-25 mins

Serve with bake at home olive ciabatta
