4 leftover bell peppers.... what to make?

I was thinking maybe roasting them and trying to preserve them in oil. I remember an Italian friend making me some yummy peppers in an oil/vinegar mix as antipasti but can't seem to find a reasonable recipe. Any other ideas? Thanks!

Roast pepper and lentil soup is a favourite of mine. Freezes well too.

Stuff them with cous cous/pearl barley mix?

They're great in tarts/frittata/pasta sauces

Chop them into chunks and bake with chicken pieces and chorizo

Make a spicy tomato sauce with white beans (like cannelini) in it and then stuff it into the peppers, grate a little cheese over the top and roast - then serve them with rice or couscous

Roast them in pieces with garlic and olive oil. Add to salad, sarnies, anything really

Just use them as normal over the coming week? They shouldn't go off too quickly unless they are already on the turn?

Slice them and freeze, you can then use them for Fajitas, pasta sauces etc as and when. They'll only be suitable for cooking though, not raw in salads.

No such thing as left over peppers in this house since we discovered peperonata. Won't link a recipe, as google will give you plenty to choose from.

But I wouldn't go for any of the "quick cook" peperonatas. Nice slow cooking, or even making in advance, really makes the difference.
