Refreshing frozen veg

Veg where I live is generally quite poor quality and expensive so I bought a big bag of frozen squash and sweet potato instead of fresh.

I was planning to cook it, mash it with cream and butter, freeze it in portion and feed it to 11mo DS. However, the package says 'if thawed, do not refreeze'.

The internet seems to think refreshing frozen veg is safe as long as it's been cooked properly and not defrosted at room temp. I was going to put it in the microwave according to the package instructions.

WDYT? Is this safe?

Process would be:

Cook in microwave
Mash with cream/butter
Freeze in portions
Defrost individual portions in fridge
Reheat in microwave
