Jazzier veg ideas for a Sunday Roast?

IHopeYourCakeIsShit · 17/09/2017 10:10

Doing first Sunday roast since Easter and never seem to get much further than broccoli, carrots and variations thereof.
I have bought a lovely piece of beef and want to be less boring with my veg, any ideas?

It's Sunday, it's MN somebody must be cooking something more exciting than a carrot?

myrtleWilson · 17/09/2017 10:55

FurryDogMother · 17/09/2017 10:56

Red cabbage (don't like it myself, but obvs some people do!)
Pan-fried courgettes in garlic butter
Cauliflower cheese
Steamed marrow with white pepper and butter
Roast sweet potatoes
Mashed swede
Roast turnips
Jerusalem artichokes
Salsify
Spicy butterbeans

StupidSlimyGit · 17/09/2017 10:56

Roast sweet potatoes in the meat juices, corn on the cob, cauliflower cheese, mushrooms again cooked in the meat juice, baked tomatoes, parsnips?

NoTractorsAtTheTable · 17/09/2017 10:58

Roasted beetroot is my new favourite side veg - especially with garlic and thyme recipe

Scrowy · 17/09/2017 10:59

Cheesy leek sauce
Carrots roasted with balsamic and honey
Sliced courgettes/leeks with peas and mint
Boulanger or dauphinois potatoes
Roasted beetroot and garlic

SpinDry · 17/09/2017 11:05

Courgettes pan fried in olive oil and garlic with cherry tomatoes, then popped into a dish and sprinkled with cheese. Lush with most roasts!

Dauphinous instead of roast potatoes.

We also have buttered leeks with every roast. Not big fans of boiled veg evety time.

LadyPenelopeCantDance · 17/09/2017 11:06

Honey roast parsnips and cheesy leeks are the favourites here.

StewPots · 17/09/2017 11:14

I'm doing carrots, honey roasted parsnips, garlic roast potatoes...but I'm going to have roast beetroot and cheesy leeks too. I may even chuck on some token spinach!

HeyMicky · 17/09/2017 11:14

I'm doing dauphinoise potatoes and asparagus with tonight's roast chicken

HolgerDanske · 17/09/2017 11:19

Celeriac remoulade.

Or roasted celeriac.

FedUpWithBriiiiiick · 17/09/2017 11:21

Savoy cabbage, finely shredded and fried with bacon

Mmmm

MaMisled · 17/09/2017 11:25

Roasted potatoes, sweet potato, onion, peppers, courgette, swede and vine tomatoes, parsnips, carrotts, covered in olive oil, salt, garlic and herbs.

OffcialMalbecTaster · 17/09/2017 11:32

Im doing winter roast veg today. Its a SW recipe but lools great. Sweet potatoes, celeriac, carrots, parsnips, swede, leeks, red onion & garlic. Cover with a bit of oil, rosemary and coriander seeds.

Will also fry off some kale with bacon for a green element.

NeonFlower · 17/09/2017 11:36

Simple is best for me. Classic flavours. Although red cabbage done nicely is pleasant, I can never get it right.

IHopeYourCakeIsShit · 17/09/2017 12:31

Great ideas here, thanks.

Parsnips roasted with honey, sesame oil and cumin seeds
Savoy cabbage stir fried with bacon
Chicory and parmesan gratin
Carrots roasted with orange
Creamed leeks

I wouldn't do those all at once...I like a couple of simple veggies and one or two fancy ones. Too many clashing flavours otherwise.

Same here - except for Christmas dinner, when for me half of the point is having a different-flavoured mouthful every time and being relaxed and un-time pressured enough to enjoy each one!
