Stuffed Peppers Accompaniment

Found a recipe for red peppers stuffed with rice lentils and mushrooms that I really fancy making, especially as I have half the ingredients left over from another meal.
I'm not sure what to make with it however - any suggestions?
I thought perhaps some chicken breasts but can't decide on a glaze or spice.

It sounds like those peppers will be a meal in themselves. Why would you have chicken as well? I'd just go for crusty bread and a tomatoey sauce., spiced to compliment the pepper filling.

DH is a bit of a carnivore and prefers to have meat with basically every meal... Hmm
I only have enough for 1 red pepper each so do you think that would be filling enough if I put some mince in it?

If you add mince, I think it probably would be sufficient. If you want meat on the side and stick with the veg option I'd personally go with some lamb chops. They work well with lentils and mushrooms.

Do cous cous with some tasty spices and chickpeas, and stir through some feta cubes just before you serve it.
