Fool proof recipe giant cupcake!

Hi everyone.

Ok in no way am I an expert baker or anything but I do enjoy baking cupcakes. For my sons first birthday we are doing a cake smash and we have to provide the cake.... how hard can it be.... turns out very!

I first tried a cake tin with a Pyrex dish. I wrote down the recipe I used but haven't dug it out. Didn't look good anyway!

Brought a giant cupcake mould... a tin one (not silicone) thought this would be perfect.
Recipe I googled -

340g butter
350g caster sugar
340g self raising flour
6 medium eggs.

Put in the oven, after half an hour the tops were looking quite well done. I put a knife through the middle and it was like raw inside so I moved them down in the oven and turned the oven up slightly. Anyway about 20 minutes later after I gave my son his bottle (I could smell burning). Yup burnt to a crisp! Got them straight out the oven and put a knife through different parts of the bottom part and it was fine the middle was still a little wet though. Where have I gone wrong?

I'm stressing as it's only a few weeks away and I don't really want to have to pay someone to it for us. Sorry it's such a long post but does anyone have any tips and or recipes to get this right?! I know it's going to be smashed up but it needs to be baked properly

That recipe looks fine but you need cook it for much much longer and on a lower temperature. This will allow it to cook evenly without burning. Don't open the oven door until you can smell the cake baking. I'd give it at least 1 hour before checking. If it looks done on top but is raw inside cover the top in foil and cook for longer, checking at 10 minute intervals.

Thank you for replying @TickledOnion the temp of the oven was originally 160c fan oven. Then when I moved them down I put it to 180c. Suppose it didn't make a difference after turning the oven up. I can't keep cocking up as it's costing me as much as paying someone by buying all the butter eggs, flour etc

After many, many, many home made attempts I discovered Betty Crocker cake mix comes out PERFECTLY every timeGrin must be something to do with the oil content and not sticking.

I bake, people pay me for my cakes but dear God this had me stumped!!

Thank you @DameDiazepamTheDramaQueen I honestly can't even imagine where I've gone so wrong. My first attempt with the Pyrex dish and cake tin where baked perfectly! It just looked a mess when all put together hence the reason for buying an actual cupcake tin.

I really wanted to make my own mix but if I'm going to get a better bake with Shop brought I'll have to look at that. How many do you think I'll need? Obviously it's on a larger scale 🙈

One packet does a standard giant cup cake tin ime. It's £2 I think from Tesco.
