How do I stop the mash sinking Into the fish?

Leave the fish pie mix to cool a big after adding sauce.

Last time I made one I cooked the fish briefly in milk with a bay leaf and half an onion - then left it to steep for 20 mins. Then used that mik to make a white sauce and put cheese in the mash topping. It was pretty good.

I use the milk method too. I don't cook it for long, just bring to the boil then transfer into a warm oven dish or the fish will overcook in the oven.

I put raw fish pie mix and a bag of defrosted frozen prawns in the bottom of the dish. Make cheese sauce (thicker than usual to account for water in the fish) and pour over fish. Leave for a bit. Dollop mash on top, grate cheese, cook.

I often use creme fraiche for the sauce and add dijon mustard and seasoning. Strips of leeks sauted in butter scattered over the top then some grated cheese is goo too. To make it more grown up i also add chopped gherkins and capers to the sauce but kids may not like that.

I also add chopped hard boiled eggs into the mix, and sometimes peas too (it probably says this on the recipe/goes without saying anyway, but just in case!)

I beat extra butter into the warm infused milk before thickening it to make a really rich sauce, or infuse parsley.

Completely different (my DD not keep on floppy food):
Boil potatoes with plenty of salt and slice them.
Butter a dish and layer the mixed fish/prawns/leeks/veg/whatever with layers of potato. When dish full to top fill in all the cracks with well seasoned beaten egg with a splash of milk. Top with grated cheese and bake until the egg is cooked all the way through: when the egg is cooked the fish will be.
Serve in wedges with a puile of green veg or salad on the side.

Lidl do an amazing luxury fish pie for one that I have when it's just me eating.
