Anyone got a good chicken casserole recipe?

Trying to cut down on red meat and the only casserole i do currently is a beef one. Would prefer to use chicken breast or thigh fillets rather than any pieces with bones in and it needs to be easy to chuck all the ingredients in as i am often on my own cooking and looking after 2 lo's. Anyone got any good, tasty (but not spicy hot) recipe's?

This is a good basic one;
brown some chicken thighs in olive oil. Take them out the pan and throw in a bit more oil and some chopped onion or leeks (or both), garlic, celery and carrot.
Fry until the onion goes a bit golden, add about a tablespoon of plain flour and stir for about a minute.
Add about a pint of chicken or veg stock (we use marigold a lot), season and put the lid on.
Leave for about an hour.
Goes well with rice.

fillets can go a bit dry if you are casseroling ...

ANyway - coat chicken in paprika, tumeric, cumin and salt and pepper (pinch of each) and then brown chicken in olive oil and then take out of the pan - brown potatoes, sweet potatoes, chunks of celery, mushrooms, leeks (any veg really), then put the chicken back in and add a can of chopped tomatoes and stock to cover. Add some lemon zest and herbs - cook on the hob or in the oven for an hour - i serve with herby cous cous and it is yummy

My MIL has a wicked one and oh-so easy!

It basically involves ..

Main ingredients - chicken, onions, sausages and any usual veg like carrots, leeks, etc

Optional extras - still anything really! but here are our usual : again any other veg, chestnuts (I personally love this!), any leftover bacon.

Brown the main ingredients, pop them into a casserole dish, pop the rest of your extra ingredients. Add stock and water. Shuff into oven for a couple of hours and enjoy!!!

Don't forget to stir in some redcurrant jelly or mango chutney at the end.

A quick and easy one is to take big chunks of chicken breast, carrots & mushrooms and put in a casserole dish with 2 tins of Heinz Tomato soup and cook in the oven. Lovely served with mash. I have served this many a time and no-one has ever guessed that it's tomato soup. Has to be Heinz though!

Fry a diced chicken breast in olive oil. Add cut up mushrooms. Season with salt, pepper and thyme. Cook for 1mn then add sun-dried tomatoes. Cook for 2 mn. Add creme fraiche until it melts. Serve with pasta.

I use chicken thighs on the bone, but this can be done with fillets although I don't think you will need to cook for so long. My recipe takes about 5 minutes to throw together and then about 1-2 hours cooking. (I have tried browning off but doesn't make that much difference) Put chicken in casserole dish with chopped onion, carrot and celery, a tin of chopped tomatoes, tin of canellini beans and 500mls of chicken/veg stock. Add salt and pepper and a sprinkle of herbs if using. Put in preheated oven 200c for about 1 1/2 to 2 hours. Serve with rice. Perfect!

moroccan chicken casserole

fry 2 chicken breasts & 2 thighs + 2 chopped onions + 1 crushed garlic clove + 1 tsp ginger powder + 1 pinch saffron in olive oil. Don't let it go brown (kills flavors)
Add 2 cups water, season,cover, simmer medium heat 20 mn.
Add 1/2 lemon juiced, handfull olives, handfull parsley and coriander chopped. simmer 5 mn
Add choice of vegetable. (traditionally that would be carrots and peas or artichoke hearts and peas or potatoes). simmer another 10 mn.
Reduce sauce if too watery. Enjoy with crusty bread.
