How to cook sweet potato?

I've had sweet potato chunks as a meat substitute in a few things lately and really enjoyed it. But how do you go about cooking the sweet potato?

If I wanted to make say, a curry - do you need to pre-cook the sweet potato before you start making the sauce?

Whenever I've attempted sweet potato at home it's always undercooked.

For court I normally cut it in to cubes/chunks and put it in the oven to bake whilst I start the sauce (for about 15 minutes). Then take it out, add to the sauce and leave to simmer.

*curry, not court!

You could microwave the chunks of sweet potato until nearly done, then finish it off by letting it summer in the curry/stew/sauce.

Depends how long you want to cook your curry/stew for - I normally put it in completely raw because I simmer my curries for quite a long time. It does cook quicker than normal potato but otherwise I just use it exactly the same way! Good for wedges/roast chunks etc as you don't need to pre-boil.

The orange-fleshed one cooks really fast so you don't need to pre-cook it.
