So sorry for the delay in coming back to the thread FusionChefGeoff - I have the memory of a forgetful goldfish
. Anyway, here are the recipes:
Chocolate Yogurt Cake
This mixture will make an 8" layer cake (2 layers), 24 cupcakes, or a one layer 10" cake.
150ml veg oil
150ml yogurt (best to use full fat)
60ml golden syrup
3 eggs
170g caster sugar
225g self raising flour
3 tbps cocoa powder
1/2 tsp bicarbonate of soda
1/2 tsp salt
Put the oil, yogurt, golden syrup, eggs and sugar in a bowl or free-standing mixer and beat well till well mixed together.
Sift in the flour, cocoa powder, bicarb and salt and beat again till completely combined. The mixture will be quite runny.
Pour into greased and lined tins and bake - for the 8" cake, it takes about 25 minutes, the 10" one will take about 35 - 40 mins, cupcakes about 20 mins.
Nigella's Icing
75g unsalted butter
175g good quality dark chocolate
300g icing sugar
1 tbsp golden syrup
125ml sour cream
1 tsp vanilla extract
Melt the butter & chocolate in a good sized bowl over a pan of gently simmering water.
Once the butter and chocolate have melted add the golden syrup, sour cream and vanilla to the mixture and then sieve in the icing sugar. Beat well until fully mixed together. If it's too runny, add a little more icing sugar; if too stiff, add a little boiled water (I've never had to do this).
This makes enough icing to amply cover and fill an 8" cake.
