Favourite duck breast recipes?

I have two large duck breasts and can't really find a recipe I like. What's your go-to recipe for duck?

We really like Good Food roasted duck breasts with plum sauce.

You can make the sauce in advance ...there is normally too much so I freeze it for next time.

Salt the skin and pan fry skin side down until skin is very crispy then slice and put in wraps with salad and hoi sin sauce keep the fat in the pan for roast potatoes

I fry skin side down with rosemary and mash butter beans in the juices to serve with. Takes all of five minutes and is delicious
