DS starts secondary school on Tuesday gulp

He is fast growing and always hungry so I'm looking for ideas for quick filling breakfasts for him to set him up for the day. The school do hot meals for breakfasts, snacks and lunches and to be honest we just can't afford for him to be spending a fortune in food once he gets to school but obviously don't want him to be hungry throughout the day.

Scrambled egg on toast is super quick. The eggs can be scrambled in the time it takes to cook the toast. Anything protein based is usually filling.

Porridge. Eggs-omelette or scrambled on toast

The other thing I do a lot is make egg "muffins" that can be made in advance and blasted in the microwave for 10 seconds.

Thank you. Purple, what are your egg muffins? I'm not always around in the mornings so something that can be made ahead and my DM can rustle up quickly would be ideal

It's basically these but you can input whatever filling in them you want.

Overnight oats.
Cheese, ham and bread.
Hard boiled eggs, ham and bread.
Cottage cheese and tomatoes.
Smoked fish platter.

I find two slices of toast with peanut butter to be incredibly filling, more so than any combination of eggs, meat, cheese etc that I've tried and way more so than porridge.

We do egg or sausage muffins for DS in the morning as he has a long bus ride to school (12 miles). Keep the muffins ready sliced in the freezer to toast from frozen. Either a egg beaten in a mug with a knob of butter, a splash of milk and some seasoning and microwaved for 90 seconds or a sausage patty defrosted overnight and nuked to warm up. I make the patties up in bulk every so often, cook and cool before freezing. If he wants a sausage muffin in the morning it's up to him to take a patty out to defrost the night before.

Some great ideas, thank you.

Purple those muffins look ideal, thanks

Maryz I plan on him taking a packed lunch as well so things like pasta salad are ideal.

LadyMonica how do you make up the sausage patties? Good idea to have the pre prepared muffins ready for toasting. Off to update my shopping list (with plenty of eggs)

Great! They can be frozen. They're really good with sliced potato in them (frittata style). I had to find a load of easy breakfast/lunch ideas after going back to work full time last year. They're probably my favourite.

The snap pots of beans microwave in the time it takes for toast to toast and no saucepan to wash up. Add cheese for extra protein.
Bagels with cream cheese and smoked salmon also good.
Do you have a sandwich toaster? Cheese and ham toasties great and can even be eaten walking to the bus stop!

Munchkin08 · 04/09/2017 08:01

Breakfast wraps, egg (omelette), bacon, hash brown, cheese if you want, these can be frozen and heated up in the microwave.

More great ideas, thank you very much.

I especially love the ones that can be prepared ahead and shoved in his hand as he walks out the door Smile

My DD's favourite:
Toasted ham & cheese croissants

(I prepare them the night before and then just pop them in the sandwich toaster)
