Why did my lasagne go like this?

I do a variation of lasagne, maybe I can't call it lasagne really!

Anyway instead of becemel sauce, I use creme fraiche and mozzarella cheese.

When I cooked and cooled it it looked delicious.

Today I've taken it out of the fridge and it looks like the creme fraiche has gone funny. It looks crumbly and even though I've reheated it, it just looks gross. Sad

Is it because I've cooked, cooled and reheated it?

Kids ate it Blush but I just can't stomach it.

Yep! When it's cooled it has separated.

Is it ok to actually eat though?

yes it wil be fine and should taste fine its just separated

I made lasagne with leftover mascarpone once - a soggy, oily mess (which tasted ok-ish) Sad

It will taste ok but would have been better to eat straight out of the oven.
