Quick, not too fussy dinner ideas

Tomorrow night I am making dinner for my boyfriend and my dad. They have not met before, so I don't want to spend a lot of time in the kitchen, leaving them to make awkward chit chat, and I'll only have an hour or so once I get in from work. Usually I'd make a frittata or stir fry for something quick, but I want something a bit more special. No dietary requirements, but nothing salady. Does anyone have any ideas? I've looked on recipe sites but everything either looks like it takes too long or is a salad of some sort!

What about a lasagne?

Make everything tonight, assemble, coverin foil and bing in fridge then you just need to heat it through when you come home
For about 45 mins?

Serve with a green salad and garlic bread.

Pudding of Eton mess, dead simple!

Or-

Chicken thighs roasted with garlic cloves, red onions, and then at the end throw in some cherry toms, some torn basil leaves and a splash of balsamic vinegar. Serve with crumbled feta on top and home made chips/wedges?

Thank you for the suggestions. I would have loved to have made lasagne, but I don't have any time to do any prep tonight, which I probably should have mentioned in my first post! The chicken tray bake might be an idea though!

This chicken traybake is delicious. Little time prepping and everyone seems to love it.
1 hour to cook but all you have to do is throw it together, oven 20 minutes, put chicken in, oven 20 minutes, add peppers, oven 20 minutes. Done.
