Damson recipes please!

I picked approx 15lbs of Damsons at the weekend thanks to a kind person offering them for free on a local Facebook page. So far I have made damson gin, chutney and jam ready for Christmas presents. Still got a large quantity left.

Any suggestions please for a way of using them before I stew the lot and stick them in the freezer complete with stones ready for crumbles. Not needing to destone them would be a major advantage, quite hired with skimming stones out of the pulp now!
Thanks

There is an RHS recipe for a yoghurt-based damson icecream online. It is very good - sherbetty.

Thanks! That sounds different .

Any other ideas...still got plenty?

I also boil them down (without added water or sugar) and put them through a sieve to make a paste, freeze it in batches & then defrost to use as: base for icecream, jam base, sweetened as a coulis - used on porridge or granola/yoghurt brekkie, base for damson curd, added to apple crumbles etc.

Brilliant, I think that will use most of them. Thanks.
