Cucumber glut- recipes please

I have quite a pile of homegrown cucumbers and their numbers are increasing. What recipe ideas do you have to help make best use of them?

Same here!! So far I've used some in Delia garden vegetable soup recipe - was lovely, and dh has pickled some in a sweetish kind of pickling vinegar. I wasn't sure about the pickling idea but actually they are delicious, sort of like mini gherkins!

I second the Delia recipe. Dd and I did a carboot on the weekend and sold veg, including about 8 cucumbers. We raised money for her scout troop so got the pitch for free. I have also done a few jars of pickled cucumbers - BBC Good Food recipe. Next I will do cucumber and spinach soup.

Greek salad: cucumber, pepper (yellow) and tomatoes in equal parts. Chopped into bite sized pieces. Add some black olives, onion and feta cheese to taste. Finish off with a simple olive oil & lemon juice dressing and season to taste ... a sprinkling of oregano- perfection with some crusty bread!

OR

Make a dressing with sauer cream, (water), dash of vinigar, salt, (pepper) and plenty of dill.
Slice cucumber thinly mix ... leave at least 30 min in fridge ... ideal as side salad or for BBQ.
Note: I add water, but not necessary & leave pepper out as I don't like it.

shakeyourcaboose gin was one of my selling points at the carboot Grin. I steadily peeled a cucumber and gave slices away with a merry 'Try before you buy' and did suggest putting slices into a G&T or Pimms for the over forties, more discerning customers.

I had the same problem, so have made some cucumber pickle. I used this recipe, but ditched the cloves and added some dried chilli, worked for me:

I make a nice salad with fennel. Thinly slice1 fennel and 1 cucumber (peel & seed if a monster). Place in bowl with 1 clove crushed garlic, pepper, salt, juice of 1 lemon, 1/4 cup good olive oil and thinly sliced red onion or finely chopped spring onion. Leave for 30 mins or so before serving.

Tzatziki is great too. I've also made a nice Greek salad with cucumber, onion, feta and mint with a lemon/olive oil dressing.

And an oriental salad with cucumber, onion, sesame oil & mirren is nice too. Sprinkle with toasted sesame seeds.

We had a glut last summer too, but now it is winter here and I'm really missing having garden fresh cucs.
