Whey butter - why have I never discovered this before?

OMG whey butter is sooooo good! Looks exactly the same, but tastes more creamy and feels less oily than regular butter. The slightest, daintiest tang of fresh cheese to it. I like butter - no, I love butter - but whey butter is something else entirely.

It's made by separating the fat from whey after making cheese, so it's had a fermentation process, which gives its bit of a lactic acid tang. It's quite common here ( South West) as there are so many cheese dairies.

Who cares - I generally eat low carb high fat!

Unfortunately the best way to appreciate butter is on a nice wedge of fresh bread. So my LCHF has gone slightly out of the window this week.
