Cooking for my Italian DH

I've been married to Italian DH for almost two years and I've had a crack at some 'authentic' dishes but always end up throwing something in that DH is horrified by (in a funny way!)

DH happily eats anything I give him when it's my turn to cook, but I would love to cook some lovely proper Italian food for our anniversary weekend coming up.

Has anyone got any recipes or ingredients that they swear by? Or just general rules of thumb for Italian cooking. Obviously I could ask DH and family but that would ruin surprise!

I use a lot of Gino de campo recipes. This Sea Bass with cannellini beans is really good.

Sorry but you need his mammas secrets ( then in my case half the salt and oil). I cook from scratch 100% . Also if you read Italian get an Italian cook book - not an english Italian cook book . It helps. I have pasta fagioli down to a fine art now . Look online like benedetta Parodi she does some simple but good dishes.

I have several silver spoon cookbooks. Meant to be totally authentic. But I must confess, I haven't yet cooked from any of them!!
