I've done the creme brulee with rhubarb at the bottom - (it's in Jamie Oliver) - lovely.

Rhubarb goes perfectly with banana - cook the rhubarb a bit and add a sliced banana and some cream or yoghurt. Surprisingly special.

stew it and freeze it until you are over your rhurbarb over load then defrost with ice cream - yum!

When I was little we used to get sticks of rhubarb with a poke as a special treat. Take stick of raw rhubarb, dip in bag of granulated sugar, eat and repeat. At the end eat all the now pink sugar at the bottom of the bag.

I suspect the mumsnet food police would object though .

ok, simmer your rhubarb with brown sugar and a little ginger.
Then strain it
throw away rhubarb cos we've all had enough of it.(or, snore make a crumble if you must)

Add beautiful pink liquid to vodka, ginger beer and ice. Drink until puddled.

I had a spectacularly good rhubarb sorbet at someones house on the weekend.

apparently it was v easy - but the tartness really balanced the sugar. like lemon sorbet I suppose. god it was good.

I have a good recipe for rhubarb clafoutis if you want - but I'll warn you it has 8 eggs and a heap of double cream in it so I reckon oh.... about 3000 calories a slice. and it is so good you end up eating the leftovers cold out of the fridge thus completing your calorific intake for the month of April in approximately 4 minutes...
