I have no idea why. I followed the recipe and cooked it at the correct temp for an hour as required and yet it stayed raw inside, and of course sank. Didn't matter how much I tried to cook the cake thereafter is resolutely stayed raw. So I think the water was seeping from the apples or something.
I've binned it and I'm now after some fail proof recipes please. I have cooking apples on one tree and conference pears on another. We like to do a cake every now and then, slice it and freeze it and then get out a slice at a time for cakey custard where the kids and DP share a bowl.
