Metallic muffins!

I've finally managed to get a muffin recipe just about right! They taste ok, they look lovely, and I'm awful at baking so I'm quite pleased.

However, they've got a slight metallic aftertaste. What could be causing this? I followed he recipe exactly this time. Recipe attached - any help appreciated!

Could it be the bicarb or baking powder - did you use tablespoon instead of teaspoon?

too much raising agent most likely....I tend to go with SR flour for muffins and the like...it really makes no difference for this sort of thing, you leave out the raising agent and sub in SR flour

clairethewitch I definitely didn't but we made that exact mistake two batches ago Blush It tastes horrendous! These were much better, quite nice but just a bit of an aftertaste.

I'll try SR flour instead with the next batch, which will be my sixth! I'm getting there!

ferriswheel Terrifying thought! Shock But that would mean DH must be up the duff as well as he was the first to notice the taste!

Well I tried with just self raising flour and they're great! I replaced the courgettes with carrot and apple because hats all I had and they're my best batch yet! Thank you mumsnetters Grin
