peppermint creams, are they meant to be hard or soft??

tried to make some with ds1, have hsd them in fridge for an hour and they are quite soft and don't taste very pepperminty either

You need loads more peppermint essence than you'd expect

hmmmm, we overdid the peppermint when we made them at Christmas.

I do crusty on outside, soft in. I never put mine in the fridge though, I leave them with the lid off until the outside has crisped up then put a lid on and leave them out. I've made lethal ones too!

You may need take them out of the fridge to dry - all the recipes i know say 'not in fridge'. They need to harden in the air, but you could out a light tea towel over them in a cool place.

I made some weeks in advance for Christmas and froze them. When we ate them they were perfect, crumbly-soft inside and crispy (like snow) on the outside.

There's more than one way to skin a cat though

Has anybody got a tried and tested recipe and do you have to use raw egg (as I'd rather not but seem to remember they might involve it). I love peppermint creams and haven't had them since I was a girl guide!

i have just drizzled them with some more peppermint essence, might do the trick!

they are fairly crispy on the outside now i think.

i have never eaten them before so wasn't sure if it was another disaster.

this is the recipe i used :

1 egg white
350g icing sugar
3 drops peppermint essence
2 drops green food colouring
125g dark chocolate, broken into pieces

1 whisk egg white until frothy
sieve in cing sugar and mix well
add peppermint essence and colouring
mix it up

sprinkle icing sugar onto your hands and then roll mixture into small balls, place on baking tray lined with non stick paper.

flatten each ball with fork to form flat discs, place in fridge for and hour.

melt the chocolate and then dip each sweet in half way.

set in fridge.

Oh no, was coping quite well without chocolate until saw this. Now NEED something sweet !!!!!!!!!!!!!!!
