Ideas for a slightly less fussy child

This time last year I used to have to battle DD to eat any meals apart from tinned soup and beans.
I've persisted and all of a sudden she eats (she 9 very soon)! She's also more willing to try things a bit (still hard but much more open).
She wouldn't eat any veg AT ALL but is okay about it now and even isn't bothered about onions in things and small veg in bolognese

She's coeliac which can effect choices a little bit but I would like to widen her meals more.

Currently she will eat:
Spaghetti bolognese
Roast chicken/chicken casserole with veg and GF Yorkshire puddings
Sausage casserole
Chilli (not spicy) with kidney beans and rice
Chicken and vegetable curry (not spicy) and rice
Pasta and mixed veg sauce
Macaroni cheese
Homemade soups (leek and potato, carrot and lentil etc)
Breaded chicken with chips and beans (this is a new thing)
Plain pizza

She likes olives and garlic bread and strong cheese - so I think she should like more things I think

The one thing she won't try is fish/seafood but I am allergic so I can't cook it (or touch it) and slightly worried she might be too anyway

We are going to try baked potatoes this week and I want her to try omelette again but apart from that I'm a bit stuck for ideas.

The one thing she won't try is Chinese food for some reason (although most of it is off limits anyway)

Any ideas?

Falafel
Chicken skewers (add any flavouring)
Gnocchi (make your own with gf flour)
Toad in the hole (gf sausages and batter)
Fajitas with corn tacos or tortilla
Just roll do gf puff pastry, make a tart.
Lasagne (gf pasta sheets)

How about trying some more rice based dishes - like risotto, jambalaya or paella?
Thai chicken curry - if you go for a green one then it's milder than red
Stir fry (although not sure if you would class that as Chinese?) - you could do chicken or steak and serve it with rice or gluten free noodles

Fajitas or tacos. DS loves these and likes to build his own. To be fair, anything in a corn tortilla goes in this household!
I've made a very successful mac n cheese with gluten free pasta. I put lardons in mine and top with sliced tomatoes.
Have you tried chilli with no chilli in? I batch cook this and serve it with rice/pittas/nachos.
