As the title says really. I'm looking for ideas for quick meals for one. Preferably easy to prepare and healthy.

U could make little tin foil parcels in the oven, so chicken or fish or whatever u fancy, lots of seasoning, potatoes and veg and put in the oven, then u can put whatever amount u like in and it's fairly quick and no mess!

Ok maybe not quick but could always cook in the oven when cooking the night before then reheat. I guess it's not quick but minimal hands on time.

If you cook a jacket potato in the microwave and then shove it in the oven for a bit to crisp the skin, it is quick.

Stir fry with prawns or chicken
Baked fish with courgette and tomato with couscous or microwave rice
Scrambled or poached eggs on toast

Soup- half a head of broccoli, half an onion and garlic clove. Fry garlic and onion till soft, add broccoli chopped and stock to cover. Bring to boil- summer for 15 minutes and blend. Add Stilton if you like it. Should make two bowls- one to eat, one to freeze.

Omelette

Pasta with cream cheese, Broccoli and smoked salmon

Shashushka

Eggs en coccote and variations (with spinach or ham or chorizo etc)

Miso soup with veg and udon noodles

Stir fry

Chargrilled veg in a flatbread ( 50g wholemeal flour, salt, enough water to make s dough- knead , roll and fry off) topped with pesto or Harissa

Mushrooms on toast (or beans, sardines, scrambled eggs)

Toasties- ham and cheese, Nutella and banana, pear and blue cheese, ham and pineapple, Brie and cranberry, leftover bolognese and chilli are good in toasties too!

Steak or chicken breast with cannellini or butter bean mash ( warm through a tin of beans with a sprig of rosemary, salt and pepper, then mash with a fork)

Quesadillas

I kind of miss cooking for one- you're guaranteed that you'll eat it and not whine -still in the throes of fussy children here-
