Ideas for main course for four (ideally prepare ahead)

I've got some friends coming round so looking for something fairly easy to cook (or at least prepare ahead) . Probably chicken or beef. Any ideas please?

chicken fillets (beaten) stuffed with boursin (or similar), wrapped with parma ham / proscuitto and braised in white wine.

Easy to prep ahead. Serve with new potatoes and asparagus.

Jamie Olivers sausage bake.

Chopped onion and crushed garlic in a serving dish, shit loads of cherry toms, rosemary thyme salt and pepper. Good lug of olive oil. Double again of balsamic vingear. Mix. Chuck in 8 sausages. Mix. Shove in the oven for 40 mins. Serve with buttered crusty bread.

We had this for dinner tonight, minus the aloli and green beans. I just roasted some tomatoes and flat mushrooms with blue cheese because they needed eating.

Fairly hassle free and quick, you could prepare the lentils ahead and have everything ready to go into the oven.

Lasagne? Jamie Oliver does a good one. Prepare ahead then cook once they arrive. Serve with green salad and crusty bread

Beef wellington with dauphinois potatoes and purple sprouting brocolli. Not very summery but it's so cold at the moment!
Seafood spaghetti, or spaghetti with clams? Very quick to cook.

It is delicious! You can flex it too - this week I stuffed the beaten fillets with some stuffing - just spread it onto the chicken - and a cocktail sausage. I rolled them up and fixed with a cocktail stick. Again, I poured white wine into the dish - you can also add chicken stock if you like.

It was a mini Christmas dinner! The DC loved it...

Meant to add that I took the sausage out of the skin (snip skin with a pair of scissors and squeeze), ie just sausagemeat - I think they might burst if you leave them in their skins.
