I am doing lunch on Saturday (late notice thanks to hubs) for my husband's Spanish colleague, wife and 3 year old twins.

Colleague doesn't eat meat (waiting on confirmation if he eats fish) the rest of his family do.

Any suggestions on what I could make? I'd like to do something a bit more than just sarnies or soup

Caesar salad but those that want chicken can add it separately. If he can eat fish, keep the anchovies in otherwise omit them.

I'd play it safe and do jacket potatoes with lots of bits so they can all just take what they like. Not exciting, but they'll go home well fed.

I would do a big veggie quiche or puff pastry tart and some cold meat probably gammon, some little baby new potatoes either just boiled or roasted, and lots of nice salads, a green salad, tomato, mozzarella and basil, homemade coleslaw, roasted veg and cous cous etc.

Greek spinach and feta filo pie with various salads such as pasta & pesto, tomato & green peppers, potato salad.

Or for something hot, vegetarian mousakka or pea and asparagus risotto.

Also do something simple for the kids, chicken goujons, simple salad of cucumber and cherry toms etc.

Salads and quiche with new potatoes? Could buy the quiche, get a couple of nice ones from M&S/Waitrose. Boil potatoes, toss in olive oil and season and roast then top with chopped chives and in a bowl so they look good then various salads - green salad, tomatoes and cucumber salad, maybe a chickpea salad?

Thanks - some nice ideas there - I definitely think a trip to M&s is in order!
