Need home-made fat free vinaigrette please!

Normally I make a vinaigrette/French oil/vinegar dressing for salad.

Any suggestions for a fat-free similar dressing? I am doing Weight Watchers and eating a lot more salad than I used to but can't bear it without dressing.

There must be somethign I can make from what's in the cupboard - vinegar/lemon juice/mustard etc??

Balsamic vinegar is supposed to make the dressing need far less oil.

For no oil at all, I would just dress the salad with lemon juice.

For low fat, there are dressings you can make with natural yogurt. If you use live yogurt there's also the advantages of the good bacteria we hear so much about in the adverts.

use either lemon juice or low fat yogurt with lots of herbs and spices . (alternate flavours for variety)

  • coriander & soy sauce & onion & ginger
  • chives & yogurt & horseradish
  • lemon & garlic & parsley
  • Yogurt & cumin & lemon & garlic

You can also try cooked veg salads.

  • steam and mash courgette or aubergine with garlic and lemon juice and herbs
  • ratatouille (tomato/onion/aubergine/cougette)
