Blackberries - any novel ideas?

Picked my first lot of wild blackberries today, so apart from the obvious crumbles, jam etc, anyone got any other ideas on how to use this abundance?

Plonk them in a nonstick pan and cover with maple syrup. Warm gentle then pour over pancakes and/or ice-cream. Yum!

Depends on quantity really. If loads then blackberry and apple wine is worth a go.
Or, you could cook with your choice of sweetener, whizz up in a blender/pass through a sieve and make ice lollies.

Freeze them. Spread out on a baking tray and bung them in the freezer. Two hours later put them in a bag or box. Then you can dig them out, whenever you want, and put them in porridge etc.

Saute a shallot, chuck in some blackberries, let them squash down a bit, add a bit of balsamic if you think it needs it.

When it looks the consistency you like sauces, serve with duck. Or venison. Or something meaty.

They don't last long once picked (up to 24 hours) so don't mess around! I'd freeze or cook / compote what you don't use tonight.

Blackberry spiced rum. Bottle of spiced rum (I use aldi's, it's fine !) Brown sugar. Berries. Turn the bottle every now and then. Strain it out using a muslin after about three months. Yum yum .

There were blackberries out and yummy at my kids school so I went off searching for them yesterday and the big area we knew of hey weren't ripe?!?!? about a 10min drive from the school. Bizarre. I'd been so excited about crumble!!

I love this recipe for Blackberriess&Coconut squares It's fast and delicious. I always make it when there is a cake sale on during bramble season.
