I've had the worst day today and all I want is cake but there's no butter Sad
Can anyone give me a recipe for cake without butter please?! Hopefully something naughty because of aforementioned bad day Grin

Anna Del Conte's apple cake is amazing, made with olive oil rather than butter. Recipe is on epicurious.com.

Bara brith contains no butter. BUT you might be stuffed because you should really soak the fruit for a few hours and butter it once sliced anyway.

I think you can make cupcakes with veg oil?

Yep - here - thought so. Muffin recipe with oil not butter. You could add whatever indulgences you have to it - chocolate chunks?

You can substitute the equivalent weight of oil for butter in many types of cake in my experience. It won't come out exactly the same, but will generally be a delicious alternative.

There is a chocolate cake recipe using oil and milk... oil milk four, baking powder, cocoa, black treacle, eggs, sugar...

French yogurt cake -- you need plain yogurt and oil, no butter. Helps if you have a lemon or orange lying around as the zest really makes the flavour...I always put vanilla extract as well, even if it's not required.

JohnnyUtah I like the look of that apple cake recipe (huge A de C fan) and have just printed it off epicurious.com. Trouble is, it mentions creme of tartar in the method, but no mention of it (or quantities) in list of ingreds? Any ideas pls?

Must be in the air. I'm just back from a funeral of a previously fit and well friend who literally dropped dead at 36. Not the best day for any of us.

Yes please let us know the outcome. I think the rise with oil cakes is good, but they don't keep for long. I also do a cheese scone with oil not butter and that too is light and delicious.

I've just checked my book - it is half a teaspoon of cream of tartar. (It is from Amaretto, Apple Cake and Artichokes.)

It is an amazingly light cake, it's lovely.

I make this cake using light olive oil, half - two thirds the amount of sugar and loads more carrots and spice (and don't bother with the icing) than the recipe suggests and it's one of my best bakes.
Anyone who tastes it declares it a winner.

If its just for you, you could always do a mug cake in the microwave. use oil instead of butter and could be ready in less than 5 minutes from now... in fact... *wanders off to the kitchen
