Too many eggs!

I've just found 2 boxes of eggs that are at their bbe date hidden at the back of the cupboard. I don't really like older eggs soft boiled etc, so what could I do with them?
Keep in mind I'm not the best cook!

Frittata?

Bobbiepin · 20/07/2017 10:27

Egg mayo? Not very imaginative but I would happily eat egg mayo with a spoon on its own!

Chocolate mousse :)

toosexyforyahshirt · 20/07/2017 10:29

Eggs last for weeks and weeks past their date (which is entirely arbitrary anyway) so I wouldn't be worried. But if I did want to get rid of some I'd be making custard, pancakes, yorkshire puddings, meringues, or omelettes.

Omelettes
Quiche
A big fry up
Scrambled/Poached/Fries
Egg Mayonnaise
Chocolate Mousse
Sponge Cake
Eton Mess
Custard with Jelly/Trifle

I'd make a big frittata, you can freeze it in slices and it makes a good lunch. But as toosexy says, they last for ages anyway.

Thousands of quiches and stick them in the freezer.

Also cakes (and ditto re freezer)

Weedsnseeds1 · 20/07/2017 13:49

Lemon curd

AtleastitsnotMonday · 20/07/2017 14:31

Egg fried rice
Eggy bread (French toast)
Mayonnaise
V. Thin omelettes to be used as wraps

Egg custard tart, yum. Meringue, custard, lemon tart, scrambled egg on toast, add one into pastry or bread if you bake your own to make it richer, brioche, sponge cake to eat now or freeze.

Some fab suggestions...I'd also like to add tamagoyaki, egg curry, eggs benedict with hollandaise sauce, pancakes and crêpes.

EyeHalveASpellingChequer · 24/07/2017 18:28

Big batch of pancakes

Numberonecook · 25/07/2017 22:20

The answer is always cake

MaureenMLove · 25/07/2017 22:31

Make up Yorkshire pudding batter and freeze them in the tin, then once frozen, put them all in a freezer bag?

Nearlyadoctor · 26/07/2017 06:43

Pavlova!!

PumpkinSpiceEverything · 26/07/2017 10:44
