Enchiladas or fajitas for dinner party

I'm thinking of doing Tex mex for a dinner party for my husbands birthday. There will be 6 adults. I'm thinking chicken fajitas as people can just add their own bits but my friend pointed out they're quiet messy to eat. Would enchiladas be a better idea? I'm planning on serving these with baked potatoes, Refried beans, chips, guacamole, salsa etc.

I'd stick with fajitas, as you say people can make their own as they like them then, and it's a bit easier for you than enchiladas.

Fajhitas. Would do wedges though. Dips. Nachos maybe? Magaritas?

If I want to do posh fajhitas for dinner party I make a steak chilli, wraps, rice, salad, wedges, dips.

Enchiladas - you can make them in advance and then just have them in the oven. Much less faffing

If I was doing Mexican for a crowd I would just do a huge pot of chilli (proper slow cooked chilli), rice, nachos, cheese, guacamole, jalapeños and sour cream. Serve it all to the table and people can help themselves.

I love fajitas, but I wouldn't want to eat them at a dinner party especially if I didn't know some of the people really well.
Enchiladas sounds delicious.

It's just for husbands parents and sister and her husband we've all seen each other at our best and worst Grin

In that case - Fajitas it is Grin

Yeah I've decided fajitas it's is even thinking about it now I'm drooling. Hubbys favourite dinner is steak and chips but if he thinks I'm going to cook 6 steaks to liking he can think again :-)

Not jackets! If you want a potato I think wedges go better, of sweet potato chips.
With fajitas it's all the extra bits that make it so I'd go to town with the guacamole, salsa, sour cream, grated cheese, shredded lettuce, jalapeños etc.
