Healthy food - no oven

Got a challenge for you lovely ladies. I currently have no kitchen due to a refit and need healthy but yummy meal ideas for two adults, and two small but hungry boys. I do have: a camping stove (one ring), a toaster, a kettle and a slow cooker. Please throw all your ideas my way!

You can cook cous cous by putting it in a bowl, covering with boiling water and leaving it to soak for 5-10 mins.

Make a cous cous salad? Add roasted veg either from supermarket, or "roast" slowly in a frying pan or toaster bag. Plus cubed feta, olives, cherry toms...

Stirfry
Chilli or fajitas served in wraps
Frittata
Falafel in pittas with salad
Pasta with smoked salmon and Philli stired through.

Do you have a microwave or BBQ?

Fajita wrap with salad etc.
Smoked mackerel, boiled eggs and new potatoes salad.
fritata
heuvos ranceros
paella
risotto (or fried rice with 'bits' and curry/sweet and sour sauce)

I rarely use my oven. We do a lot of hob or microwave cooking.

Cook pasta, then stir through 2 tbsp olive oil. Rind and juice of a small lemon, rocket and smoked salmon. Very quick and tasty and you only need one pot Smile
