Dead boring but: olive oil, dash of water and wholegrain mustard - mix together - et voila.

Water only Cadders??? no vinegar or lemon juice?

Balsamic and olive oil, 1:3 is the standard ratio that works best.

honey, whoelgrain mustard, cider vinegar, salt and pepper and olive oil.

sesame seeds popped in a pan and then add orange juice, mirin, soy sauce and some water - this is really good for asian salads and has no fat.

Roast shallots and puree them with garlic, mustard and balsamic, add oil to emulsify.

I could go on but the best thing to do is experiment.

I love salads but I think without dressings they seem rather bereft.

I do:

  • oil, white wine vinegar, and mustard
  • oil and fancy vinegar (e.g. saffron)
  • oil, balsamic vinegar, and a bit of balsamic must
  • fry cubed bread, add balsamic at the end. Sometimes I add pancetta, or seeds, too.

Your basic 1 part Balsamic/3 parts olive oil
then add about same amount maple syrup as vinegar- plus black pepper.

First had this in Montreal- its fantastic (particularly on cheese/ham salads) and now I am addicted- we have it on everything...

My favourite one:

100ml olive oil
100ml sesame oil
50ml balsamic
juice of 1/2 a lime
good few twists of black pepper
1 tsp sea salt
1 tsp dark brown sugar

It's GORGEOUS (if I do say so myself )

It's a reduction of balsamic vinegar. I get it from the olive oil and balsamic vinegar stall [ponce]

Oh, whoops, it actually says it's 'Crema di aceta balsemic' [sp] - must and thickener, apparently.

Not a pre mixed dressing but I drizzle pumpkin seed oil & balsamic vinegar over my salads then add a few parmesan shavings.

Pumpkin seed oil is to die for if you haven't already tasted it, very dark green with a strong nutty flavour.
