Poached whole salmon

Have you got any tips for the perfect whole poached salmon? I haven't got a fish kettle. I know you can still steam it in foil in the oven, but can you also poach it in a big round pot?

I once saw a salmon that was served coiled up on a big round plate, and it looked great.

My fishmonger loans out a fish kettle.

I've done one without, wrapped in foil in my largest Aga roasting tin.

Never had the courage to do a coiled one.
