...say you had three small cod fillets (frozen) to feed two people for dinner tomorrow night, what would you do with them?!Grin

Make a tomato, chorizo and red pepper sauce and cook the fish in it, serve with rice and green veg.

Chop tomatoes & garlic, make a foil parcel for the fish, add the toatoes & garlic, olives, herbs and a splash of white wine. Fasten parcel and bake. Serve with rice or orzo pasta.

Fish pie - I really like Jamie Oliver's 'Fantastic Fish Pie'

Cod crumble - put the fish in an oven-proof dish, cover with a crumble of fresh breadcrumbs mixed with olive oil, crushed garlic, splash of lemon juice & dried tarragon. Bake for 25-30 mins, serve with veg.

Chop into chunks and marinate in a mix of natural yoghurt and curry paste. Thread onto skewers. In a pan heat a few tablespoons of mango chutney put skewers on for lined tray (washing up is horrific otherwise) and drizzle over the chutney. Bake in the oven for about 10mins. Serve with sweet potato wedges and salad.

Similar to AtleastitsnotMonday but would then mix it into a Kedgeree. Rice, plenty of greens, raisins and a couple of boiled eggs. make the little go a long way!
