Toasted Sandwiches

Hi guys

Just looking for some inspiration on what I could fill a toasted sandwich with? My normal go to is cheese, onion and tomato...

My current fav is spiced mashed up butternut squash (add ground cumin and coriander), griddled halloumi, courgette and aubergine pickle. Even better in a toasted tortilla sandwich.

Cheese and lime pickle is my other fav.

Was going to say bacon, brie and cranberry sauce but someone beat me to it!

Mushroom, onion and curry paste. Squeeze of tomato purée if you want.

Beans and an egg (be careful this can get very messy...) cheese optional but recommended.
