why are my salads soggy?

When I eat out, I love the nice carrot salad that's basically grated carrot with bits added and some dressing. Whenever I do it at home, it's soggy, not crisp, but not so soggy that you can drain the excess liquid off. Can anyone tell me what I'm doing wrong please?

If you shock the grated carrot in iced water after grating it will crisp it right up, and only dress it just before you are ready to serve. So 5 mins in iced water, drain, dry with kitchen roll or in a salad spinner, and dress just before you need it.

Anything you wash needs to be spun in a salad spinner to get rid of any moisture. Serve a portion and dress on your plate not the serving / storage container.
