Very low fat flapjacks or similar, recipes/ideas needed

So the husband has managed to culture a large gall stone which will require surgery, he is in a very busy work role and regularly works through lunch and does long days.
Along with the low fat diet He would like to have something at work to snack on in the afternoons. We are in a hot country at the moment but can get most ingredients.
I have made flapjacks just with oats, bananas, dates and milk to bind but they were "too bananary".
Any suggestions for this sweet toothed man who mustn't aggravate his condition further,

Dunno if it's lowfat but soupdragon has an amazing recipe for flapjacks.

You could make teabread or all-bran loaf - neither contain any butter and whilst many people spread it on before eating you could easily put something else on it like low fat cream cheese or jam
