Anyone want the recipe for the easiest and healthiest cakey-loaf thing, ever?

Here it is:
(makes a 2lb loaf)

2 cups of bran/bran cereal (any bran cereal so long as it is 100% bran)
2 cups sultanas
2 cups milk
1 cup sugar (any kind although soft dark sugar is great) (1 cup is a bit sweet for me so I use about 3/4 cup)

Soak all the above ingredients in a bowl for a minimum of 1 hour

Stir in 2 cups of self raising flour.

Dollop into 2lb loaf tin lined with greasproof paper

Bake at gm 4 - 5 for 30 - 45 minutes.

Nice with a bit of butter on it.

bran cereal? ie bran flakes??

Thank you, might make this for my high cholesterol dh.
He won't be allowed butter on it.

Yup - bran flakes are fine, so long as they are 100% and you leave them to soak Lulumama

Wonder if an cholesterol-busting oat version would work too Kathy? Might try one of those and let you know!

An oat version probably would work, I reckon, if you could find the right cereal to use.

Oatibix! Has sugar and salt in though so would have to cut down the sugar some more. MMMmmm... oat and honey with sultanas? I'm on a baking roll now....

OK, just done it and had the first slice while still warm, with butter, which was extremely nice
I used Weetabix Crunchy Bran and added about half a cup of oatbran.

Stuck to the paper because I was looking after dcs at the time so didn't bother greasing it properly (and probably because there's no fat in it it stuck worse than something greasier would do), but that's a minor detail.

DD helped me stir it.
