A baking challenge for the MN talents

I want to bake some biscuity things. But:

I have no eggs.
I have no butter.
I have about 100ml sunflower oil and same of coconut oil (which is liquid in this weather).

I do have flours and sugars.
I have plenty of mayonnaise.
I have jam, honey and seeds.

The biscuits must be nut-free and vegetarian.

Preferably not chocolate, as I've already made something choccy.

Any ideas?

Look yummy (and I do love peanut butter biscuits) but they need to be but-free.

Monday, my son was allergic to dairy and eggs. Use a mashed banana to replace each egg. Or use chia seeds if you have them - soak in a little of whatever flavoured liquid you are cooking with. Use coconut oil instead of butter. Then use whatever recipe you fancy, that can handle a bit of banana flavour. Can also use apple sauce as egg replacer. Or the liquid off a tin of chickpeas. Goodbye luck!

I do have chia seeds. Have never used them in baking, other than in bread. Might try that. No bananas, though. I have a sad, wrinkly apple. Maybe I'll grate it instead.

Or I could go shopping. But this is much more interesting. Grin

I love chia seeds in cakes .. makes them really moist. Never tried them in biscuits though.. I had a great pancake recipe with grated apple instead of egg. Sadly no longer home with recipes.
