Sausages for tea and I desperately need inspiration. DH is gluten free so no toad in the hole here!

Ideally something on the healthier side that DCs will also eat...have a pretty well stocked kitchen so looking for your ideas. It is hot here today but not boiling but fancy something more on the summer food style than bangers and mash with gravy!!

Anyone got on great recipes to share?

I'd do them grilled with lots of salad (maybe rice salad?) in this weather, BBQ style.

Snip the ends off, squeeze the sausage meat out a bit at a time and roll into meatballs. Chill for a while then fry them, make a garlicky tomato sauce and add the meatballs (a Spanish dish called albondigas I believe) and serve with rice.

Or fry them and add to (gluten-free??) pittas with salad, houmous, yoghurt sauce etc.

I would do a sausage casserole served with sweet potato mash or wedges, or put them in a gluten free pasta bake, Gluten free hot dog buns serve with salad etc.

I make a sort of sausage cassoulet quite often:

Pack of sausages, Toulouse Style are good.
An onion
a carrot
stick of celery
a pepper
chicken stock cube
couple of tins of chopped tomatoes
drained tin of cannellini beans
tablespoon of tomato purée
dried oregano (1 tsp ish)
few bay leaves

Heat the oven to 180, and while your at it, brown the sausages in some oil in a casserole dish for 5 mins.
Add your chopped up carrot, onion, celery and pepper to soften for ten more mins.
Disolve the stock cube in as little water as you can, then add to the pot with everything else.
Bring up to a simmer.
Put in the oven for 45 mins. I leave the lid off so it gets thick enough.

If you've used plain sausages, stir in some pesto just before you serve.

I tend to eat it with garlic bread, or a jacket potato

Serves 3 if you hand out portions like I do, although 4 if there's lots of carbs.
I generally go by the two sausages each rule.

Sausage casserole with puy (green) lentils, onion, garlic cubetti if you use it, carrots, leeks in fact any veg you want to use up, tomatoes tinned or fresh if you like them, red wine and stock.

Sausage casserole also works well with tomatoes and butter beans or chick peas.
