Thinking of making strawberry and cream cupcakes on saturday but i don't want to top it with buttercream icing - does anyone have a recipe for stabilised whipping cream? I don't think just whipping double cream with vanilla and icing sugar will hold its shape, especially as saturday is meant to be a scorching day!
