gimme a simple chicken rissotto recipie please

if i try it off my own back well end up having chippy for tea

i have chicken, chicken stock, rice, garlic, green peppers

is that ok?

Have you made a risotto before? Is the rice proper arborio/carnaroli rice? (I'm a bit of a purist when it comes to food)

This is my fave one.

Finely chop onion, slowly fry in butter withour browning for 5 mins. Add 250g arborio rice & fresh thyme, stir. Have 1 litre chicken stock keeping warm. Add a ladle then stir till absorbed. Keep adding a ladle & stirring till all stock absorbed. This takes at least 20 mins. Heat should be low, you don't want to burn the rice at the bottom. Then add chopped cooked chicken, creme fraiche & fresh parsley. Its a good way of using left over chicken after a roast. Finally, a grating of fresh parmesan finishes it off. HTH

I cheat and use pudding rice, it tastes fine.
What you can do which I do, is marinate the chicken with some fresh lemon juice, basalmic vinegar and some basil before cooking the chicken. I use the left over marinade in the stock.

You can actually cheat a bit more and do it in the oven if you don't want to stir -- not as creamy, but still nice.

Chop onion, cook on stovetop, until soft. Add chicken (cut into small chunks) cook until starting to brown add 440g rice & 1.2 liters stock 150ml white wine. Bring to boil. Put in preheated 180C oven, bake 20min, stir halfway through (or until rice al dente). Stir in some roasted pepper (i usually have red), basil & 50g butter. Serve.
