Pork mince ideas

We've got some pork mince that I want to do for dinner tonight. I don't want to do a ragu/bolognese type sauce, but other that that am very open to suggestions. Any favourites or interesting ideas?

Meatballs with a Thai-style flavour? Mix mince with peanut butter, garlic and basil, fry until well browned, pour in some coconut milk and stock and cook for about 10 minutes. Serve with rice and stir fried veg.

Or a chilli, with cumin, oregano and chocolate/cocoa and any sort of tinned beans.

It makes great patties. I mix it with minced red onion, fennel and a bit of frozen spinach (defrosted and squeezed) bound together with beaten egg and a few breadcrumbs, flavoured with nutmeg, thyme and garlic. DC love them. 500g makes about 12-16 patties. Can serve them with rice or in burger buns or with potato wedges, with steamed veg or stir fry or salad. Very versatile. They go well with sweet chilli sauce.

More meatballs, mix with chopped onion,some fresh thyme and sage (well chopped) , plenty of salt and pepper. form into small ish balls, fry gently until nicely caramelised on the outside. Fry some onions, add a tin or two of chopped tomatoes, salt and pepper , put into an oven proof flattish dish, add meatballs and heat through for about 20 minutes. Turn meatballs over halfway. Serve with tagliatelle and a green salad.

Also works with lamb mince but use fresh mint and parsley.

Enchiladas? I brown it with onion, garlic and peppers, add chilli flakes, tinned tomatoes, paprika and salt and pepper, then fill tortillas, cover with a cheese sauce, then bake in the oven. I have also done a similar base for a Mexican lasagne - using tortillas instead of lasagne sheets but layering exactly the same way.

Thai style pork on little gem lettuce.

Blitz chilli, garlic, ginger, lemongrass. Dry fry pork mince, remove from pan. Fry spice mix, add mince back, fish sauce, lime juice, bit of brown sugar.

Coriander over the top and serve in little gem leaves. DH will have rice as well.

Stuffed peppers. My partner makes these but as I'm not allowed in the kitchen when he cooks I couldn't tell you his recipe.

I am allowed into the kitchen later though to wash every dish, saucepan and utensil we own.

pork and apple burgers or crumble in some black pudding? Pork burgers are usually much nicer than normal beef burgers imo, pile them up with bacon and cheese too! YUM!!

something stroganoffish can be nice with rice

or head off toward a pork and beans kind of thing...last time I did this I used up some black beans, and I had some smoked paprika in there too, and it was delish!

Spicy pork burgers( I based loosely on nigel slater) ground up with lime/ chilli/ garlic/ pancetta/ coriander fried and served in pitta bread with lettuce and yoghurt or mayo
Alternative cook up with Thai spices and serve in lettuce cups ... loosely based on a Waitrose recipient I think but have seen others similar

Fedupoftheheat I made a fried rice type thing and it was delicious! And there's leftovers for lunch tomorrow thanks for the inspiration!
