Veggie meals your kids love?

We're not veggie but I'd like us all to eat more veggie meals to reduce our meat intake.

My kids range from age 3-9, and the veggie food they eat is not very interesting! I'm looking for meals I want to eat too, or that I can give to visitors, so beans on toast is not the answer!

What are your best veggie meals that kids love? Thank you!

We're not veggie either but eat very little meat, my babies are a lot younger than yours so don't know if this will help but mine enjoy

Veg chilli ( I use peppers, onion, chickpeas, kidney beans, cannelloni beans & butter beans) they have that with either jacket potatoe/rice or garlic bread

Veg pasta bake ( quick to make and you use any veg you like)

Veg tagine with cous cous

Chickpea burgers

Sweet potato, chickpea & spinach curry ( I make two pots one for me & dh with chilli added and a no chilli one for the babies)

Veg & noodles stir fry ( I sometimes use quorn)

Pizza ( let the dc choose a few veggies to put on it)

Battered halloumi, with chopped salad and sweet potato chips ( the halloumi is lovely especially with a sweet chilli dip)

Omelette with chips, peas & sweetcorn for a treat

Sweet potato falafels and pita
Roasted veg and mozzarella puff pastry tart
Frittata
Jack monroe carrot, kidney bean and cumin burgers
Macoroni cheese
Gnocchi bake with cherry tomatoes, spinich and mozzarella
Stir fry veg with cashews and sweet chilli noodles

We're very in to quorn here! Not vegetarians but the quorn mince and 'chicken' pieces are lovely. And so easy! Quorn bolognaise knocked up in 10 mins!!

Veggie risotto.

Mini sweetcorn chopped up
onions
mushrooms
tomatoes
Green beans (chopped up)
peas
rice
veg stock
oregano

Cooks in about 20 minutes and it's lovely with garlic bread or lovely soft chewy bread covered in butter.

We aren't veggie but since January have seriously lowered the huge amount of meat we were eating and it's been greatGrin
We buy a vast amount of veg fresh and frozen and love the asda and sainsburys bean burgers and mushroom burgers. We make a five bean chilli in the slow cooker every Monday and have that with rice.
I do a veggie Lorna )using chicken quorn)and we have it with rice and naans.
We also like big mushrooms and peppers stuffed with couscous or rice. Or cream cheese.
Macaroni cheese with spring onions added is lovey.
I buy the sainsburys nut and sweet potato roast and we have that with lots of veg and roasties.
Sweet potato fries we make ourselves and have with falafel balls and parsnips.

Dc are loving trying lots of new things and it's easy to disguise a lot of veg Grin

Were not veggie btw
